This salad packs a ton of nutritional value! Spinach is an excellent source of Vitamin K, which protects our bones, vision, brain and hearts. Lentils are a great source of soluble fiber and plant protein- helping to regulate digestion and blood sugar. And the combination of brussels sprouts (which contain cancer-fighting compounds and antioxidants, and offers vitamin K & C) and sweet potatoes (rich in vitamin A, and a grounding source of comfort in the cooler months) this salad is both nutritious and delicious!
